So this is the inspiration of The Green Leafy. Greens are such a symbol of vibrant life. In the spring we get excited to see the new life of the leaves on trees and in the garden. If you look closely at a leaf you can see all the veins and structure that are harnessing moisture and sunlight from the atmosphere to generate the energy that plant needs. They are so alive! This also makes the edible versions of green leafy vegetables to be so important to our daily health. Things like lettuce, swiss chard, pak chok, spinach, cabbage, arugula, herbs, seed sprouts and of course kale.
